Creamy Avocado Pasta

I am a big fan of dinner preparation being as easy and quick as possible and of course, being as nutritious as possible! This delicious recipe ticks all of those boxes.

You will LOVE it ~ Creamy Avocado Pasta and it’s 100% vegan, yeah!


  • 10-15 cloves of garlic
  • Olive Oil
  • Lemon Juice
  • One ripe avocado
  • 2 teaspoons Nutritional Yeast
  • 2-3 handfuls fresh basil
  • 1 onion
  • Mushrooms
  • Broccoli or beans or cauliflower
  • Sunflower seeds
  • Pasta – your choice, spaghetti, fettuccine etc


  1. Wrap the garlic in alfoil and roast at 200deg for 40 mins.
  2. Once roasted, unwrap garlic from foil and separate from it’s skin.
  3. To make the Avocado Cream, in a food processor place the following:
  • Avocado in food processorThe roasted garlic pieces
  • One ripe avocado
  • 1/2 cup Olive Oil
  • 2 teaspoons Nutritional Yeast
  • Juice of one lemon
  • 2-3 handfuls of fresh basil
  • Salt & Pepper to taste



In a frying pan/wok saute: 

  • One chopped white onion
  • Handful of mushrooms
  • Garlic & Olive Oil
  • Broccoli and mushroomsThen add whatever veg you like. Broccoli works well, as does beans or cauliflower.






  • Cook pasta, drain.
  • Add pasta to vegetables and stir through, add avocado cream mixture, stir well.
  • Dish up and sprinkle with roasted Sunflower Seeds and/or Roasted Cauliflower.

You’ll notice my cover pic dish has beans in it and not broccoli. Why? because the first time I made this dish with broccoli we devoured it immediately and I completely forgot to take a photo because it was so delicious!
